of the last of the grandes marques still owned by its founding line. Réserve — the white-foil bottle — is the house style distilled: roughly equal parts Chardonnay, Pinot Noir and Pinot Meunier drawn from more than thirty crus, then left to rest for around four years in cellars cut deep into the chalk beneath Épernay. Those cellars are among the coldest in Champagne, and the slow, cold second fermentation is what gives the wine its famously fine bead.

Beside it sits a box from Pierre Marcolini, who opened in Brussels in 1995 and does something few chocolatiers bother with: he buys cocoa beans at origin and roasts and refines them himself, rather than starting from someone else's couverture. The eighteen truffles in this box are the result — a thin shell over a ganache that tastes of cocoa rather than sugar.

It arrives in our black-and-gold presentation box on shredded tissue, hand-tied with ribbon, and carrying your message on a card.

What's Inside

Champagne · 75cl · Brut NV

1 × Pol Roger 'Réserve' Brut Champagne, in its gift carton

Belgian truffles · 108g · 18 pieces

1 × Pierre Marcolini Box of 18 Truffles

Presentation

Black and gold gift box, shredded tissue, hand-tied ribbon and a message card

Character

Citrus & white flower

Brioche & pâtisserie

Chocolate richness

Sweetness

Green appleWhite flowersBriocheCitrus zestDark ganacheRoasted cocoa

Best Enjoyed

<circle cx="12" cy="12" r="8.4"></circle>

Chilled to 8–10°C

Three hours in the fridge, or twenty minutes in ice and water.

A tulip, not a coupe

The narrower bowl holds the aromatics and the bead.

<circle cx="10.4" cy="13.4" r="1.1"></circle>

Champagne first

Sip, then the truffle.
